DEATH TO DIETERS CHICKEN LASAGNA
Got this recipe from my mother who was raving about it...lots of work .. but the end product is worth it !!
Ingredients
- SAUCE:
- 2 Pkgs of Hollandaise Sauce Mix (made to directions)",
- 3 tsp lemon juice
- 2 tsp of peppper
- REMAINDER OF INGREDIENTS:
- 3 cups of sliced mushrooms
- 2 cups chopped onions
- 8 cooked lasagna noodles
- 2 lbs boneless chicken breasts, sliced thin and cooked
- salt and pepper
- 1 tsp dried basil
- 1 tsp dried oregano
- 4 cups of shredded mozzarella
- 1 cup grated parmesan
- 1 lb fresh asparagus - cooked till soft and cut into small pieces
Preparation
Step 1
SAUCE:
Make according to directions, add lemon juice and pepper
REMAINDER:
Cook lasagna noodles and run cold water over them
Cook asparagus and cool
Cook chicken, slice and cool
Saute mushrooms and onions in 1 tbsp butter till soft.
Put sauce in 9 x 13 pan - enought to cover bottom Add noodles, Cover with 1/2 of chicken, basil, oregnao and salt and pepper.
Top with 1/2 of mushroom mixture and drizzle 1/2 of remaining hollandaise.
Top with 1/2 of mozzarella and parmesan cheese.
Put all asparagus over the cheese in a neat layer.
Repeat.
Cook uncovered at 350 for 1 hour.
Let stand for 15 minutes before serving.
