Ingredients

  • 1 3/4 cups all-purpose flour, plus more for dusting
  • 3 tablespoons sugar
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoon fine salt
  • 6 tablespoons cold unsalted butter, cut into 1/2-inch cubes
  • 1/3 cup dried cherries, chopped
  • 2 teaspoons finely grated orange zest
  • 2 large eggs
  • 4-5 tablespoons heavy cream

Preparation

Step 1

Preheat the oven to 425.
Sift together the flour, sugar, baking powder and salt. Work the butter into the flour mixture with fingers, until it resembles coarse meal. Add in the cherries and zest.
Beat together one egg and 4 tablespoons of cream in a small bowl. Add the mixture to the flour and mix with a fork until the dough just comes together. If the dough seems dry, add more cream.
Turn the dough onto a floured surface. Pat into a 7-inch round, ½-inch thick. Cut into rounds with a 2½-inch cutter. Gather, re-roll and cut the scraps.
Place the scones on a parchment-lined baking sheet and brush with the remaining egg, beaten.
Bake until golden brown, about 14 minutes.
