Grilled Pig Mac

It's basically pulled pork, leftover mac and cheese (cut into squares), and sliced Deli sharp cheddar cheese on buttered and pan grilled sourdough bread.

Ingredients

  • For each sandwich you'll need:

  • A square of leftover mac and cheese (about 3/4" thick)

  • Pulled pork, desired amount (I cooked a Boston Butt in the slow cooker)

  • 3

    slices Deli sharp cheddar cheese

  • 2

    slices sourdough bread

  • Butter for the bread

  • Skillet that has a cover

Directions

Sandwich Assembly: On bottom bread, place a slice of Sharp cheddar, square of mac and cheese, another slice of cheese, pulled pork, salt and pepper, another cheese slice, top bread. In a skillet that has a cover, melt a tablespoon of butter over medium-low heat. Pan-grill the sandwich in the butter, covered, until bread is browned on both sides and cheese is melted, turning over carefully to brown the other side. Serve immediately. Note: If bread browns too much before cheese completely melts, remove sandwich from skillet and microwave a few seconds.
