Plum-Orange Jam

Ingredients

  • 5 cups chopped plums (about 3 1/2 lb)
  • 1 Tbsp. grated orange peel (about 1/2 med)
  • 5 Tbsp. Classic Pectin
  • 5 1/2 cups sugar
  • 14 cup orange liqueur

Preparation

Step 1

Combine plums, grated orange peel, and pectin in a large saucepan. Bring mixture to a boil over medium high heat, stirring to blend in pectin. Add sugar, stirring until sugar dissolves. Bring mixture to a rolling boil that cannot be stirred down. Boil hard 1 minute, stirring constantly. remove from heat. Stir in orange liqueur. Slim off foam, if necessary.

Ladle into hot jars. Wipe rims, adjust lids and bands. Process in a hot water canner for 10 minutes.
