Ingredients
- 4 sweet potatoes, peeled and quartered
- 1 cup chicken stock
- 1/2 cup orange juice
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon ground cinnamon
- 2 Tablespoons unsalted butter
- 2 cups mini marshmallows
Preparation
Step 1
Place the sweet potatoes, stock, orange juice, salt, pepper, and cinnamon into the Instant Pot; secure the lid.
Press the Manual button and enter 10 minutes.
When the cook time is complete and the pressure has fully released, remove the lid with caution.
Drain the sweet potatoes, add the butter, and mash the sweet potatoes using a potato masher.
Set oven to broil.
Apply nonstick cooking spray to an oven-safe casserole dish and place the mashed sweet potatoes into the casserole; top with marshmallows.
Place the casserole on the center rack of the oven and cook for 2 minutes, or until marshmallows are lightly toasted.
Remove the casserole from the oven and serve.
