Ingredients
- 2 racks of lamb
- Salt and pepper
- 1/2 cup Dijon mustard
- 1 cup pistachio nuts, finely chopped
- 1/2 cup plain breadcrumbs
- 8 to 10 tablespoons olive oil or melted butter or both
- 2 tablespoons fresh parsley, chopped
- 2 shallots, chopped
- 1 1/2 tablespoons lemon rind, grated
- 1 large garlic clove, chopped
- 1 teaspoon fresh thyme leaves or use 1/2 teaspoon dried thyme
- Pinch nutmeg

Preparation
Step 1
Preheat the oven to 425°F.
Place meat in roasting pan and sprinkle it with salt and pepper. Combine the remaining ingredients in a bowl, adding olive oil or butter if the mixture seems dry. Press the mixture onto the meat.
Roast the racks 10 minutes. Reduce heat to 375°F. Roast another 20 to 35 minutes, depending on degree of doneness desired (a meat thermometer should register between 120 to 150°F) Let the meat rest 15 minutes before carving.
