Ingredients

  • 2

    racks of lamb

  • Salt and pepper

  • 1/2

    cup Dijon mustard

  • 1

    cup pistachio nuts, finely chopped

  • 1/2

    cup plain breadcrumbs

  • 8 to 10

    tablespoons olive oil or melted butter or both

  • 2

    tablespoons fresh parsley, chopped

  • 2

    shallots, chopped

  • 1 1/2

    tablespoons lemon rind, grated

  • 1

    large garlic clove, chopped

  • 1

    teaspoon fresh thyme leaves or use 1/2 teaspoon dried thyme

  • Pinch nutmeg

Directions

Preheat the oven to 425°F. Place meat in roasting pan and sprinkle it with salt and pepper. Combine the remaining ingredients in a bowl, adding olive oil or butter if the mixture seems dry. Press the mixture onto the meat. Roast the racks 10 minutes. Reduce heat to 375°F. Roast another 20 to 35 minutes, depending on degree of doneness desired (a meat thermometer should register between 120 to 150°F) Let the meat rest 15 minutes before carving.
