Ingredients
- 3 lbs. potatoes (about 9 medium), peeled and cubed
- 6 slices bacon cooked and chopped
- 8 ounces cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup butter, cubed
- 1/4 cup milk
- 1 1/2 tsp. onion powder
- 1 tsp. salt
- 1 tsp. garlic powder
- 1/2 tsp. pepper
- 1 cup (4 oz.) shredded cheddar cheese
- 3 green onions, chopped
Preparation
Step 1
Cook potatoes in boiling water until tender, about 10-15 minutes.
Meanwhile in a skillet, cook bacon until crisp.
Move bacon to a paper towel to drain.
Drain potatoes; return to pot.
Mash potatoes, gradually adding cream cheese, sour cream and butter.
Stir in milk and seasonings.
Transfer to a greased 13x9 inch pan.
Sprinkle with cheese, green onion and bacon.
Refrigerate up to 1 day.
Preheat oven to 350°. Remove potatoes from refrigerator while oven preheats.
Bake covered for about 30 minutes.
Uncover and bake another 10 minutes or until heated through.
