  • 1 1 1 pear, peeled, cored, and cut into a small dice
  • 8 8 8 ounces (1 cup) whole milk ricotta, at room temperature
  • 4 4 4 ounces (1/2 cup) mascarpone, at room temperature
  • 1/4 1/4 1/4 cup freshly grated Parmesan cheese
  • to salt and white pepper, to taste

  • to to pear with canola or veg oil and butter. Add a little sugar and grated cheese. Sante until tender. Add to ricotta stuffed shell filling. But no mozzarella. Try mixing ricotta into pan with pears before filling shell just to heat it a bit
