Step 1

In a large nonstick skillet head 2 tsp EVOO over medium. Add 1 bunch thinly sliced scallions and cook until soft, about 3 minutes. Then add 3.5 c fresh or frozen corn with small amount water and cook until warm, about 4 minutes, Uncover and cook until liquid is evaporated, about 2 miuntes. Then stir in 1.5 tsp lime juice and 1 chopped chipotle chile and salt and pepper to taste.
