Strawberry Salsa

Ingredients

  • Salsa:
  • 2 kiwis, peeled & diced
  • 2 golden delicious apples, peeled, cored & diced
  • 8 oz raspberries
  • 1 (16oz) carton of strawberries, diced
  • 2 T white sugar
  • 1 T brown sugar
  • 2-3 T fruit preserves, any flavor ( used strawberry )
  • Tortilla Chips:
  • 10 (10") flour tortillas
  • Melted butter or butter flavored cooking spray
  • Cinnamon Sugar:
  • 1 C white sugar
  • 2 T cinnamon

Preparation

Step 1

In a large bowl, thoroughly mix kiwis, apples, raspberries, strawberries, white sugar, brown sugar & fruit preserves.
Cover & chill in the refrigertor at least 15 mins while the oven preheats to 350*.
Coat one side of each tortillawith melted butter or spray.
Sprinkle tortillas with desired amount of cinnamon sugar, cut into wedges & arrange in a single layer on a baking sheet.
Spray again with cooking spray( not necessary if melted butter).
Bake in preheated oven 8-10 mins.
Repeat with remaining tortilla wedges.
Allow cooling approximately 15 mins.
Sreve with chilled fruit mixture.
This salsa can also be served with cinnamon graham crackers or cinnamon pita chips.
Best when made & eaten the same day, otherwise the fruit gives off too much juice & it gets runny.
