This semi-homemade muffin recipe from the Food Network is made with prepackaged corn muffin mix dressed up with colorful fruit preserves.

  • 1 package (8.5 ounces) corn muffin mix
  • 1 large egg
  • 1/3 cup milk
  • 1/4 cup flour
  • 1 teaspoon vanilla extract
  • 1/3 cup fruit jam of your choice

Step 1

Preheat oven to 375 degrees. Lightly coat a 6-cup muffin pan with vegetable oil spray.

In a large mixing bowl, combine muffin mix, egg, milk, flour and vanilla. Stir to combine. Mixture will be lumpy.

Divide batter evenly among muffin cups. Bake until edges are set and centers are soft but not wet, about 10 to 12 minutes.

Remove muffin pan from oven. Gently press a teaspoon into center of each muffin to make an indentation about one-third of the way into each muffin. Spoon a heaping teaspoon jam into each indentation.

Return muffins to oven; bake 6 more minutes. Remove from oven; cool 10 minutes. Remove muffins from pan.
