Ingredients

  • 1 small ( about 1 cup ) sweet potato ( peeled and cubed )
  • 1 pound boneless skinless chicken breasts ( 1/2 inch pieces )
  • 1 3/4 cup assorted sweet bell peppers ( seeded and chopped )
  • 1 1/2 cups green beans ( i used fresh not canned ) ( cut in half )
  • fresh broccoli ( coarsely chop )
  • seasonings
  • 5 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon paprika
  • 1 teaspoon sugar
  • 1/2 onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon salt
  • optional: 3/4 cup finely shredded cheese ( colby jack, mexican blend, cheddar, or pepper jack)
  • optional : fresh cilantro, fresh limes
  • serve with rice or quinoa

Preparation

Step 1

Pre heat 425. and line a very large sheet pan with parchment paper and set aside. Prep the chicken and veggies.
Chop the chicken into 1/2 inch pieces. Remove the stems and seeds from the peppers and coarsely chop. Cut the beans in half. Coarsely chop the broccoli. Place all the veggies and the chicken on the sheet pan. In a small bowl, combine the olive oil and all of the seasonings and mix. Pour the seasoning mixture over the veggies and chicken and toss with your hands until everything is well coated. Spread everything in to an even layer. Bake 10 minutes, flip and bake another 10 - 20 minutes until veggies and chicken are done. Remove from oven and top with cheese if using, return to oven for 2 minutes. Serve over rice or quinoa, with cilantro and lime wedgies.

( my beans needed longer cook time ) can place an equal amount of quinoa in bottoms of 4 containers topped with chicken and veggie dish and fresh for easy meal prep.
