Ingredients

  • 9 " pie crust
  • 2 medium tomatoes
  • 1/4 tsp basil
  • 10 oz frozen spinach, defrosted and squeezed dry
  • 1 C chopped fresh Mozzarella
  • 5 eggs
  • 1 cup heavy cream/milk
  • 1/4 tsp salt
  • dash pepper

Preparation

Step 1

Preheat oven to 400

Slice tomatoes into 1/4" round slices. Arrange the slices on a baking sheet, drizzle oil over tomatoes. Sprinkle basil, some salt and pepper on top. Roast for 10-15 minutes until soft.

Lower oven temp to 375

Layer tomatoes, spinach and mozzarella in crust.

Mix eggs, milk/cream salt and pepper until light and fluffy.

Pour over veggies.

Bake 35-40 minutes until center of quiche is set.
