Ingredients
- 1 Cup Yellow Corn Meal
- 1 Cup Sifted Flour
- 1/2 Cup Sugar
- 1/2 TSP Salt
- 4 TSP Baking Powder
- 2 Eggs
- 1 Cup Milk
- 1/4 Cup Shortening - Soft
Preparation
Step 1
Preheat oven and cast iron skillet to 425°.
Sift together dry ingredients in mixing bowl. Add eggs, milk, and shortening. Beat with egg beater until smooth, about 1 minute. DO NOT OVERBEAT! Bake in greased 8" cast iron skillet 20-25 minutes. Cornbread is done when a toothpick inserted into the middle comes out clean.
