Ingredients

  • 1/2 pound leftover cooked Spaghetti
  • 1/4 cup olive oil
  • Salt to taste
  • 1 tsp red pepper flakes (to taste)
  • 3 large eggs
  • 1 cup grated Parmesan cheese + more for topping
  • 1/4 cup milk or light cream
  • 1 cup cooked and crumbled sweet Italian sausage
  • 1 cup diced tomatoes

Preparation

Step 1

Preheat oven to 350.
Grease a 10 inch pie plate.
Heat olive oil in nonstick skillet over medium high heat. Add pasta and seasonings to taste and turn to coat until warm.
In a large bowl whisk eggs then stir in cheese, milk or cream, sausage and tomatoes. Pour warm pasta into the bowl and toss to combine ingredients.
Pour Spaghetti mixture into the greased pie pan. Push noodles up into the sides and bottom to form a crust. Sprinkle with additional cheese and bake for 25 minutes.
Serve warm or at room temperature.
