Ingredients

  • 2 8 oz. packages cream cheese
  • 1 bunch scallions, use all but the white part - finely chopped
  • 2 Tbs. lemon juice
  • 2 Tbs. garlic juice or garlic paste
  • 8 oz. Maine lobster meat, finely chopped
  • 30 wonton wrappers
  • 1 egg mixed with 2 Tbs. water
  • Canola oil
  • Chinese duck or plum sauce or spicy Chinese sauce for dipping

Step 1

Put the cream chesse in a microwave safe bowl and microwave for 45 seconds. Add scallions to cream cheese then lemon, garlic juice or paste and mix well. Add lobster or combine all together in a food processor or blender.

Put wontons wrappers on a large cookie sheet. Place a tsp. of mixture in middle - don't add too much or it will squeeze out when you enclose. Rub egg wash around edges of wonton and fold in half and press to make a seal.

Refrigerate wontons for at least 2 hours. Heat oil to 350 and deep fry wontons, 6 at a time, flipping when they are lightly browned. Drain on a paper towel and keep warm in a 200 oven until all are fried.
