Hazy Waters Orange Blossom Pancakes

This sweet, moist and flavorful pancakes taste great alone. Adding a little butter and syrup, some whipped cream and fruit or a fruit syrup adds even more.
Try adding flours such a oat, coconut, etc. for some variety.

Ingredients
- Optional:
- 2 large eggs, separated
- 1 1/4 cup all-purpose flour
- 1/4 cup whole wheat flour (can also us 1/4 cup AP gluten free flour)
- 2 1/4 teaspoons baking powder
- 3 tablespoons white sugar (use brown, raw or coconut sugar for variety)
- 3/4 tsp salt
- 1 cup milk
- 3 tablespoons butter, melted
- 1/2 tsp orange blossom water
- 1 tsp vanilla extract
- 1 cup of fruit such as strawberries, blueberries, raspberries, etc.
- or
- 1/2 cup of chocolate chips, nuts, etc.
Preparation
Step 1
In a small bowl, beat egg whites until fluffy and stiff; set aside.
In a large bowl, sift together flours and baking powder.
In a medium mixing bowl, beat egg yolks. Add milk, melted butter, orange blossom water and vanilla. Beat again for 30 seconds.
Stir egg mixture into dry ingredients; mix until batter is smooth. If adding fruit, stir in now.
Fold in beaten egg whites.
Cook pancake on a 375 degree greased griddle until browned on each side.
