Ingredients

    boneless, skinless chicken breasts, sliced thin

  • 2

    T olive oil

  • Salt & pepper

  • 8

    oz. sliced mushrooms

  • CREAMY PARMESAN GARLIC SAUCE

  • 1/4

    c butter

  • 2

    garlic cloves, minced

  • 1

    T flour

  • 1/2

    c chicken broth

  • 1

    c half and half

  • 1/2

    c grated Parmesan

  • 1/2

    t garlic powder

  • 1/4

    t pepper

  • 1/2

    t salt

  • 1

    c chopped spinach

Directions

In large skillet add olive oil. Cook chicken on medium high heat for 3 to 5 minutes per side or until browned and no longer pink in the center. Remove from pan and set aside. Add mushrooms to pan and cook until tender. Remove from pan and set aside. Make sauce. Melt butter and add garlic cloves. Cook until tender. Whisk in flour until it thickens. Whisk in chicken broth, 1/2 and 1/2, Parmesan cheese, garlic powder, and s&p. Add spinach until sauce thickens and spinach wilts. Add chicken and mushrooms to the sauce. Heat through. Serve over pasta.
