Pork Loin with Sweet Potato Strips

Ingredients
- For the Pork Loin:
- 1 teaspoon paprika
- 1 teaspoon mild curry powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon ground sage
- 1 teaspoon dried rosemary
- 1 Tablespoon olive oil
- 1 Pork Loin (1 1/2 pound)
- For the Sweet Potato Strips:
- 1 teaspoon salt
- 1 teaspoon dried tarragon
- 1 teaspoon rosemary
- 1/2 teaspoon black pepper
- 1 Tablespoon olive oil
- 4 large sweet potatoes, peeled and cut into 1/2-inch thick strips
Preparation
Step 1
Preheat oven to 350 degrees.
In a 9x13 glass baking dish, combine paprika, curry powder, salt, pepper, sage, and rosemary, mixing well and spreading the mixture out as much as possible.
Heat the oil in a large, heavy skillet over medium-high heat.
Roll the pork loin in the spice mixture, turning to coat as evenly as possible. Rub any remaining spice mixture into the pork with your hands.
Sear the pork loin in the hot skillet for about two minutes per side, until evenly browned. Remove from heat and set aside.
Wipe any leftover spice mixture from the baking dish, and grease dish. Place the pork loin into the center of the dish and bake for 45 to 50 minutes or until a meat thermometer registers 140 degrees.
To prepare the sweet potato strips combine the salt, tarragon, rosemary, and pepper in a small dish, mixing well.
Pour the oil into a large mixing bowl and toss the sweet potatoes, coating well. Add the spice mixture and toss again.
After the pork loin has been baking for 25 minutes, arrange the sweet potatoes around the pork loin, and return the dish to the oven. Bake until is done.
Cover the pork loin with foil, and allow to rest for 10 minutes before slicing.
To serve, spoon a portion of sweet potato strips onto the plate, and arrange sliced pork loin on top. This is wonderful served with a fresh crisp salad.
