Black Beans and Rice

Ingredients

  • 2 cups long grain rice
  • 2 Tbs olive oil
  • 1 cup onion, chopped
  • 1 1/2 cups green pepper, chopped
  • 1 Tbs chopped garlic
  • 2 (15oz) cans black beans
  • 1 cup vegetable or chicken stock
  • 2 Tbs red wine vinegar
  • 2 bay leaves
  • 1/2 tsp black pepper
  • 1/4 tsp cumin
  • 1 tsp salt

Preparation

Step 1

Cook rice according to package direction.
In a saucepan heat oil over medium heat, add onion, green pepper and garlic until softened, about 5 minutes.
Add black beans, broth, vinegar, bay leaves, cumin, salt and pepper. Cover and bring to a boil. Reduce heat to low and let simmer for 10 minutes. Remove bay leaves. Spoon the beans over rice and sprinkle with chopped scallions,
