- 1 (19oz) can black beans, rinsed & drained
- 2 tbsp vegetable oil
- 1/2 cup sweet onion, poblano pepper and red bell pepper, finely chopped
- 2 cloves garlic, minced
- 2 tsp hot sauce (optional)
- 1/3 cup unsalted cashews
- 1/4 cup crumbled feta cheese
- 1 egg
- 13 cup panic bread crumbs
- 4 buns
Preparation
Step 1
Spread black beans in a single layer on baking sheet and place in the over for 20 minutes at 350.
Heat 1 tbsp of the oil in a skillet over medium heat. Add onion, poblano and red bell pepper and cook, stirring until softened. Add garlic and cook, stirring an additional minute. Transfer mixture to a bowl and add hot sauce.
Place cashews in a food processor and pulse approximately 15 times. Add cashew pieces to bowl with pepper mixture.
Add rinsed beans and feta to food processor. Pulse until beans are roughly chopped. Add beans and feta to bowl with paper mixture along with the egg and bread crumbs, then season. Mix thoroughly.
Preheat grill to medium. form 4 patties. Lightly oil grill grates. Cook patties for 5 minutes per side. Dress with desired toppings.
