NUTS****Zesty Toasted Pumpkin Seeds

Ingredients

  • 1 cup raw unsalted pumpkin seeds
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon sugar
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chipotle powder
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground cinnamon
  • pinch of cayenne pepper

Preparation

Step 1

Place the pumpkin seeds in the Actifry (no oil). Cook for 4-6 minutes, or until toasted and starting to pop.

Combine the oil, sugar, cumin, chipotle powder, salt, cinnamon and cayenne in a large bowl. Add the seeds, tossing to coat. Arrange the seeds in a single layer on a parchment-lined baking sheet and let them cool for 10 minutes.

Store the seeds in glass jar for up to 2 months.
