Ingredients

  • 2 eggs
  • 1/2 t vanilla or orange extract
  • 1/2 t finely shredded lemon peel
  • 1 cup sifted powdered sugar
  • 2/3 cup all purpose flour
  • 1/4 t baking powder
  • 1/2 cup butter, melted and cooled

Preparation

Step 1

Preheat oven to 375 degrees and bake for 10 - 12 minutes.
Mix eggs, extract and lemon peel on high for 5 minutes. Gradually add powdered sugar and beat 5-7 minutes until thick and satiny. Sift flour and baking powder together and fold in. then fold in melted butter. In a 3" madeleine pan, greased and floured, pour in mixture. Bake 10 - 12 minutes until top springs back. Cool on rack 1 minute, loosen cookies, and invert onto rack. When cool sift additional powdered sugar over. Can store in freezer.
