These strawberry cookie bars could not be simpler, and they're a great fruity little treat to share with friends and family, especially in the spring and summer.

  • 1 (16.5-ounce) roll store-bought sugar cookie dough
  • 1 cup strawberry preserves
  • 1 orange, zested
  • 1/2 cup sliced almonds
  • cooking spray (to grease)

Step 1

Preheat the oven to 375ºF. Grease a 8x8-inch baking dish with cooking spray.

Break 1/3 of the cookie dough up into pieces and set aside. Press the remaining 2/3 cookie dough into the bottom of the baking dish to create a flat surface.

Add the preserves and orange zest to a large bowl, stir to combine. Spread over the cookie dough in the baking dish.

Crumble the remaining dough over the top of the strawberry mixture. Sprinkle almonds over the top and bake for 45-50 minutes or until golden brown and cooked through. Cover with foil if the almonds are getting too dark.

Remove from the oven, allow to cool, slice into bars and serve.

Use your favorite fruit jam or preserves in this recipe!
