  • 1/2 cup crunchy peanut butter
  • 1/3 cup sugar
  • 1 tsp vanilla extract
  • 1 cup oats
  • 1/2 cup whole wheat flour
  • 1/4 cup low fat milk
  • 1/4 tsp baking soda

Step 1

Preheat oven to 350. Line a rimmed baking sheet with parchment paper and set aside.

Combine the banana and peanut butter in the work bowl of a stand mixer outfitted with the paddle attachment. Beat on medium speed until well combined. Add the sugar, vanilla, oats, whole wheat flour, low fat milk and baking soda. Continue mixing until blended.

Drop the cookie dough by heaping teaspoons onto the prepared cookie sheets, leaving about 2 inches between cookies. Gently flatten the cookies into discs.

Transfer to the oven and bake until the cookies begin to brown at the edges, about 10-15 minutes. Set the baking sheets on cooling racks and let cool completely before removing the cookies. Serve immediately. Store in an airtight container in the refrigerator.
