Ingredients
- 2 Eggs
- 2/3 C milk
- 2 T melted butter
- 2 T sugar
- 1/2 C flour
- 1/2 t salt

Step 1
Combine eggs, milk, and butter in 2 quart mixing bowl.
Mix well w/wire whisk until lemon colored
Mix flour mixture in.
Let rest for 15" or in the fridge over nite.
Lightly grease skillet-non-stick.
When a water drop sizzles on griddle carefully pour about 1/4 C batter on griddle and swirl w/ spoon until even. These cook quickly so when edges begin to roll, turn quickly and when solid, place on dish to serve.
We roll these up w/ crushed strawberries, sprinkle w/powdered sugar, add a dollop of whip cream and serve w/ham for Easter Sunday tradition.
