Spanish Rice

So easy and goes with anything, not just Mexican entrees. Tried and true! jb

Ingredients

  • 1 cup long grain white rice
  • 1/2 medium onion chopped
  • 2 T. corn oil or butter
  • 1 large clove garlic, peeled and smashed
  • 1 bay leaf
  • 1 1/2 cups water
  • 1/2 cup tomato sauce
  • pinch of dried oregano, salt and pepper to taste

Preparation

Step 1

Preheat oven to 425 degrees.

In an ovenproof saucepan, heat oil or butter over medium-high heat. Add onions and cook until clear or amber but not brown, about 3 minutes. Stir in rice and cook until rice changes color, about 5 minutes.

Add water, tomato sauce, garlic, bay leaf, oregano, salt and pepper. Bring to a boil. Cover and place in preheated oven for 20 minutes.

Remove from oven. Remove bay leaf and garlic. Serve.
