Curried Deviled Eggs

Ingredients

  • 12 hard boiled eggs, peeled
  • 1/3 cup full-fat Greek style yogurt
  • 1 tbsp mustard
  • 1 tbsp curry powder (hot or mild)
  • 2 tbsp minced cilantro
  • salt and freshly ground pepper, for seasoning
  • 1 scallion, thinly sliced (green part only)

Preparation

Step 1

Slice the eggs in half lengthwise and separate egg yolks. In a mixing bowl, combine the egg yolks, yogurt, mustard, curry powder and cilantro. Mash mixture with a fork until well blended and smooth. Season to taste with salt and pepper.

Fill the egg halves with the yolk mixture, garnish with the scallions and serve immediately. Refrigerate any leftovers.
