German Potato Salad

Ingredients

  • 3 LB small red potatoes
  • 1/2 LB thick cut bacon (diced)
  • 1 large red onion (diced)
  • 1/2 C red wine vinegar
  • 2 T grainy dijon mustard
  • 1/2 C mayo
  • 1/4 C olive oil
  • salt and pepper
  • 1/2 C chives (chopped)

Preparation

Step 1

In a large pot add the potatoes and cover with water. Season with salt and boil until tender but not falling apart. Drain and cool. Cut into bite size pieces.

Heat a large skillet over med. and cook the bacon. Remove the bacon to paper towels to drain. To the same pan add the onion and cook until soft. Pour onions into a bowl, to the bowl add the vinegar, dijon, mayo, and olive oil. Season with salt and pepper.

Pour over potatoes and toss. Fold in the bacon and chives. Serve at room temp. or heated.
