- Canning supplies needed:
- 1 qt. chopped cucumber
- 2 c. chopped onion
- 2 c. chopped green & red peppers
- 1/4 c. canning salt
- 3 c. sugar
- 2 c. cider vinegar
- 1 tbsp. celery seed
- 1 tbsp. mustard seed
- Water bath canner
- Canning jars
- Canning seals and rings
- Jar lifter
- Large pot
- Bowls
- Large spoons
- Sharp knife
- Towels and dish cloths
- Ladle

Preparation
Step 1
Combine chopped vegetables in a large bowl
Sprinkle with salt and cover with cold water
Let stand for 2 hours
Drain well and press out excess water
Combine sugar, vinegar, and spices in a large pot
Bring to a boil
Add vegetables and simmer 10 minutes
Pack into hot jars leaving 1/4" head space
Wipe rims clean and put seals and rings on jars
Process according to water bath canning directions for 10 minutes
