Chilled Chocolate Tortoni

Ingredients

  • 1 8oz package Baker's semi sweet chocolate
  • 2/3 cup light or dark corn syrup
  • 2 cups heavy cream divided
  • 1 1/2 cups broken chocolate wafer cookies( break into small pieces)
  • 1 cup coarsely chopped walnuts (optional)
  • chocolate sprinkles for garnish

Preparation

Step 1

1. Line 12 ( 2 1/2 inch) muffin pans with paper cupcake liners(foil on the outside liners)
2. In a 3 quart glass bowl, combine chocolate and corn syrup. Microwave on high for 1 minute, stir. Microwave at 30 seconds increments till smooth, stirring after each 30 second increments. Stir in 1/2 cup of heavy cream into chocolate mixture until blended. Refrigerate 15 minutes or until cool.
3. Beat 1 1/2 cups heavy cream until soft peaks form. gently stir into chocolate mixture. Gently stir in broken cookies and nuts if desired
4. Spoon into muffin cups. Freeze 4-6 hours or until firm. Garnish with chocolate sprinkles. Let stand for 5 minutes before serving
5. Store covered in freezer up to 1 month
