Ingredients

  • 3 1/2 cups unbleached all-purpose flour
  • 2 cups whole wheat flour
  • 1 cup rye flour
  • 2 cups bulgur (cracked wheat)
  • 1 cup cornmeal
  • 1/2 cup instant nonfat dry-milk powder
  • 4 tsp. salt
  • 1 envelope active dry yeast
  • 1/4 cup warm water
  • 3 cups chicken broth
  • 1 egg, slightly beaten (with 1 tsp. milk)

Preparation

Step 1

1. Preheat the oven to 300 degrees.

2. Mix the first 7 ingredients in a large bowl.

3. Dissolve the yeast thoroughly in warm water (110-115 degrees) in a glass measuring cup. Now add to the fully dissolved yeast to the dry ingredients.

4. Add the chicken broth to the flour mixture, and stir until dough forms.

5. Roll out the dough until it is 1/4-inch thick. Using a large dog biscuit for a model, cut out bone shapes from the dough and place on prepared cookie sheets.

6. Brush dough with the egg (and milk) glaze.

7. Bake for 45 minutes and turn the oven off. Biscuits should remain in the oven overnight to harden.

8. Makes 30 large bones.
