Skinny Meatloaf

Ingredients

  • 1 pound ground beef
  • 1 1/2 slices whole wheat bread
  • 1 c onions, chopped
  • 2 eggs whites
  • 3 TBS ketchup
  • 1 TBS spicy brown or yellow mustard
  • 1 TBS Worcestershire sauce
  • 1/4 tsp salt
  • fresh ground pepper to taste
  • Topping
  • 1/4 c ketchup
  • 1 TBS spicy mustard or yellow mustard
  • 2 tsp brown sugar, packed

Conventional Oven

In a large bowl, combine meat, bread crumbs, onions, eggs, ketchup, mustard, Worcestershire sauce, salt and pepper. Using hands, mix together all the ingredients.

Place meat on a baking sheet free form in a loaf.

In a small bow, mix together the topping ingredients. Spread all over the top of the meatloaf.

Bake for 55 minutes. Remove from oven and let rest for at least 10 minutes before slicing.

WW=6 points WW=4 points using Weight Watchers whole wheat bread for the crumbs.
