Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 pkg (or equiv.) taco seasoning
  • 1/2 cup water
  • 1 1/2 cups (1 can) whole kernal corn
  • 1 zucchini, sliced or diced
  • 1 1/2 cups (15 ounce can) diced tomatoes, drained
  • 1 cup cooked rice
  • Shredded ColbyJack cheese

Preparation

Step 1

Brown ground beef with onions. Drain off grease.

Add water and taco seasoning. Stir well.

Add veggies. Cover. Simmer on low/medium heat until Zucchini is fork tender, but not mushy.

Serve with shredded cheese on top.
