- 1 pound ground beef
- 1 medium onion, chopped
- 1 pkg (or equiv.) taco seasoning
- 1/2 cup water
- 1 1/2 cups (1 can) whole kernal corn
- 1 zucchini, sliced or diced
- 1 1/2 cups (15 ounce can) diced tomatoes, drained
- 1 cup cooked rice
- Shredded ColbyJack cheese
Brown ground beef with onions. Drain off grease.
Add water and taco seasoning. Stir well.
Add veggies. Cover. Simmer on low/medium heat until Zucchini is fork tender, but not mushy.
Serve with shredded cheese on top.
