French Onion Pork Chops

Ingredients

  • 1 T olive oil
  • 4 large onions (sliced)
  • 8 fresh thyme sprigs
  • 1 t salt
  • 1/2 t pepper
  • 1 T butter
  • 3/4 C beef stock
  • 1/4 C red wine
  • 4 t dijon mustard
  • 4 boneless pork chops (seasoned with salt and pepper)
  • 4 OZ swiss or provolone cheese

Preparation

Step 1

Preheat oven to 325F

In a large cast iron skillet over med-high heat, caramelize the onions along with the olive oil and bundled thyme, about 15 min. Add the beef stock, butter, salt and pepper. Simmer and reduce the stock about 5 min. Pour onions into a bowl and keep warm.

Wipe out skillet and return to med-high heat place chops and sear 3 min. per side, remove chops to a plate.

Deglaze skillet with red wine and scrape up brown bits. Return onions to skillet along with the dijon,stir well. Place browned chops on top of the onions. Place in oven for 25 min. Remove skillet and place cheese on top of the chops, return to oven for 5 min. to melt the cheese.

Plate chop first and top with onions.
