SHRIMP, PINEAPPLE, BACON AND GUACAMOLE

Ingredients
- 2 large avocados, peeled and diced
- 5 sliced bacon, about 1/2 - 3/4 cup
- 1/4 pineapple, skin removed and cut into rings
- 10 medium sized shrimp, peeled and deveined
- 1 teaspoon chili powder
- 1 jalapeno, finely chopped
- 1/4 teaspoon salt
- 1/2 teaspoon cumin
- Juice of 1/2 lemon
- Salt, cayenne and lemon juice to taste

Preparation
Step 1
Brown bacon. Chop into small pieces. Reserve 1 tablespoon grease.
Dust pineapple and shrimp on both sides with chili powder. Season with a little bit of salt. Over medium-high heat sear shrimp in remaining bacon fat. Remove from pan, and chop into bit size pieces.
In a bowl, slightly mash avocado. Add ¼ teaspoon salt, cumin lemon juice and jalapeno. Gently toss in shrimp, pineapple and bacon – reserve a little bit of each for garnish.
Season to taste with salt, cayenne and lemon juice if necessary. Top with remaining shrimp, bacon and pineapple.
