STRAWBERRY RHUBARB UPSIDE DOWN CAKE

Ingredients

  • INGREDIENTS:
  • 4 tbsp butter
  • 1/2 cup light brown sugar
  • 1 cup sliced strawberries
  • 1 cup frozen or fresh rhubarb slices
  • 1 3/4 cup yellow cake mix
  • 1/2 cup water
  • 1 1/2 tbsp oil
  • 1 egg
  • 1 tsp lemon zest

DIRECTIONS:

1. Place the butter a 7 inch non stick cake pan.
2. Place in basket of the POWER AIR FRYER.
3. Melt butter at 350 degrees for 3 minutes.
4. Remove pan from POWER AIR FRYER basket.
5. Add the brown sugar and stir.
6. Add the strawberries and rhubarb to the pan and coat with the butter and sugar mixture.
7. In a medium sized bowl stir together the cake mix, water, oil, egg and lemon zest.
8. Pour batter over the strawberries and rhubarb.
9. Cover the cake pan with a piece of foil that has been sprayed with cooking spray to prevent sticking.
10. Lower the cake pan into the POWER AIR FRYER basket with a sling made of aluminum foil.
11. Set the POWER AIR FRYER temperature for 350 degrees and the time for 50 minutes.
12. Remove foil and let cake cool for 10 minutes then invert onto a serving plate.
13. Serve with whipped cream or vanilla ice cream.
