Cucumber Salad

  • 3 large cucumbers, peeled, thinly sliced
  • 2 tsp. kosher salt
  • 3 tbsp. fresh lemon juice
  • 1 tbsp. olive oil
  • 1 tbsp. sugar
  • 2 tbsp. chopped fresh dill
  • 1/2 cup thinly sliced red onion



Step 1

1. Toss cucumbers with salt in large bowl, cover with plate that rest directly on top of cucumbers, weight down with 1 pound can, let stand 1-2 hours. After the two hours, drain in colander, rinse well.
2. Combine lemon juice, olive oil, sugar and dill, slat and pepper to taste
3. Combine cucumbers and red onions, mix in dressing. Cover and refrigerate overnight
4. Serve cold or at room temperature
