Margarita Shrimp

Ingredients
- 5 tbsp. Olive oil
- 1 pound large uncooked shrimp
- 1/2 cup scallions, minced
- 4 cloves garlic, minced
- 1/4 cup Tequila
- 2 tbsp. lime juice
- 1/2 tsp. margarita salt

Preparation
Step 1
1. Heat oil in a large saucepan over medium high heat. Add Shrimp, green onions and garlic, sauté till shrimp turns pink(do not overcook). Remove from heat, add tequila. Return skillet to medium high heat and bring to boil, scraping up any browned bits
2. Transfer to medium bowl and cool. Once cool, cover and refrigerate for at least six hours
3. To serve, toss shrimp with lime juice and margarita salt, Garnish with lime wedges and serve
NOTE: I doubled the recipe and make it the day before a party
