Ingredients
- 1 leg of lamb boned and butterflied
- 8 cloves garlic, pressed
- 1 cup cooking oil
- 2 teaspoons dried tarragon
- 3 tablespoons cumin
- salt and pepper to taste

Step 1
Spread the lamb flat on a roasting pan and cover with garlic. Add oil and sprinkle with 1 teaspoon tarragon and 1 1/2 tablespoons cumin. Baste occasionally. After an hour, turn over the meat and sprinkle with the remaining tarragon and cumin. Baste and turn occasionally. Marinate at room temperature for several hours.
To cook, season with salt and pepper. Grill over hot coals for 15 minutes on each side. Meat should be pink inside and charred outside.
