Slow Cooker Potato Leek Soup

Ingredients
- Serves 6
- 2 medium uncooked carrots, peeled and sliced
- 2 medium uncooked onions, peeled and chopped
- 4 large uncooked leeks, white & pale green parts only,quartered lengthwise and cut into 1/4-inch slices
- 7 cup fat free chicken broth
- 4 medium uncooked Yukon gold potatoes, peeled and diced into 1/4 inch pieces.
- 1 tsp table salt, to taste
- 1 tsp black pepper, to taste
- 1/2 cup fat-free half-and-half
- 1 Bay Leave

Preparation
Step 1
Put all ingredients in slow cooker and set for 6-8 hours on low (until potatoes are tender.
At this point you can puree part or all using an immersion blender.
Season to taste with salt and pepper, add cream.
