Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon cinnamon
  • 3/4 cup vegetable oil
  • 3 eggs, slightly beaten
  • 2 cups sugar
  • 2 cups pears, peeled and grated
  • 1 cup nuts, chopped (or less)
  • 2 teaspoons vanilla
  • sprinkle of brown sugar for topping (optional & yummy)

Preparation

Step 1

Combine flour, soda, baking powder, salt and cinnamon in a large bowl.
Make a well in center of mixture. Combine oil, eggs, sugar, pears, nuts and vanilla.
Add to dry ingredients, stirring just until moistened.
Spoon mixture into 2 greased 8 1/2 x 4 1/2 x 3 inch loaf pans or a 9 x 13 baking pan.
Bake at 325 degrees for 1 hour and 10 minutes for loaves or 40 minutes for baking pan or until done. Cool 10 minutes before removing from pans.
