Cream of Wheat from scratch

This can be the start of some wonderful recipes. For breakfast I love to add the brown sugar and raisins. I even like to eat it cold. If you wish to make this savory do not add sugar.
Farina, Semolina, many names. You could add coconut milk instead of milk. You could add one egg yolk to a little of the cool down milk milk and whisk (you just want to temper the egg so it doesn't scramble)then whisk into the mix with a tsp of vanilla. Or you could add your favorite cheese.
Ingredients
- 2 cups milk
- 2 cup half and half
- 1/2 cup semolina
- 1 teaspoon butter
- 1 tablespoon sugar
- 1 teaspoon salt
- 2 teaspoons of brown sugar (optional)
Preparation
Step 1
Pour the milk into a medium saucepan and bring up to a boil.
Slowly add the semolina into the hot milk, while stirring rapidly and continuously. If you add the semolina too quickly, it will clump up into small balls, ruining the consistency of your porridge. Keep rapidly stirring whilst adding more semolina.
Continue to stir until porridge starts to thicken to your desired consistency.
Add the sugar, salt and butter and stir until mixed through out.
Serve. I add an extra knob of butter to my bowl, plus 2 teaspoons of brown sugar.
