Ingredients
- 1 lb skirt steak
- 3 cup mushrooms
- 1/2 onion sliced
- 1 1/2 cup beef stock
- 3 tbsp sour cream
- olive oil
- salt
- ground black pepper
- 2 tbsp cornstarch
- 2 tbsp butter
- 1/4 cup fresh parsley, chopped
Preparation
Step 1
-Season skirt steak with black pepper, salt and olive oil on both sides.
-Cook 3 minutes one side and 2 minutes on the other side for medium rare.
-Meanwhile, in a large saute pan over medium-high heat, add mushrooms and onions. Cook until mushrooms brown and onion softens. Add butter and season with salt and pepper mixing until vegetables cook evenly and carmalize. Work in beef stock.
-In a separate bowl, whisk together sour cream and cornstarch. Bring pan to a simmer and then add in by whisking sour cream mixture. Garnish with parsley.
