SALMON CROQUETTES

Ingredients

• 1 1/4 c mayonnaise
• 1 T capers
• 1 tsp. old bay seasoning or Paul Prudomme's seafood magic
• 1/2 tsp. garlic minced
• 2 1/2 tsp. lemon juice
• 1 scallion finely chopped
• 2 precooked salmon fillets
• 1 egg beaten
• 3/4 c fish fry
• 6 dashes hot sauce
• 1/4 c remoulade sauce (to be mixed into the cake)

Preparation

Step 1

. mix all the ingredients together and form into a cake and fry until golden brown on both sides
