- 4 large portobello mushroom caps
- Cooking spray
- Marinara sauce
- mozzarella cheese
- Panko bread crumbs
1. On foil lined baking sheet, place mushroom caps smooth sides down; spray with cooking spray and sprinkle with 1/4 tsp. salt. Bake at 450 for 10 min.
2. Spoon 1/4 c marinara sauce into each cap; top with thick slice of mozzarella, then 1 T panko. Spray all over with nonstick spray. Bake 15 min. longer or until cheese has melted and mushrooms are tender
3. Garnish with freshly grated Parmesan.
