Lemony Chicken Kebabs with Tomato Parsley Salad

Ingredients

  • 3 T lemon juice, divided
  • 1 T minced garlic, divided
  • 1 1/2 T minced oregano, divided
  • Salt & pepper
  • 3 T olive oil, divided
  • 4 chicken breasts halves, cut into 1 1/2" cubes
  • 2 C parsley leaves
  • 1 C chopped cherry tomatoes

Step 1

Combine 2 T lemon juice & 2 t garlic, 1 T oregano, salt & pepper in bowl; add 1 T olive oil, stirring with whisk. Add chicken & toss. Marinate in refrigerator 2 hours, covered.

Remove chicken from marinade & thread onto skewers. Heat grill pan over hi heat; add skewers & cook 6 min, turning often.

Combine remaining 1 T lemon juice, 1 t garlic, oregano, salt & pepper in med. bowl. Gradually add 2 T oil, stirring well. Add parsley & tomatoes; toss to coat. Serve chicken on top of salad
