  • 1 Large cauliflower,cut into small pieces {about a pound}
  • 3 garlic cloves, chopped
  • 2 {14 ounce} cans low sodium{ chicken broth or beef broth}
  • 2 Tablespoons fresh parsley {chopped}

Preparation

Step 1

1 Combine cauliflower, garlic and broth in a large saucepan, If the
broth does not cover the cauliflower add water to cover.
2 Bring to boil, reduce heat to medium low and simmer until cauliflower is fork tender, about 15 minutes.
3. drain cauliflower and garlic, reserving 2 tablespoons broth.
4 Hand mash, or if your'd rather transfer to a food processor and
process til smooth. adding broth of necessary to moisten mixture.
5 Season with salt and peper. add chives and parsley and stir.
Serve Hot.
6 I did something even different, I put some cream cheese in
the cauliflower just enough to taste. about 3 ounces or so.
you do not need the cheese, but it does taste good with it.
and serve warm.
